It was during Ben Bayly's time away in Italy's Valle D'Aosta as a young chef that his love of Italian cooking was born. Aosta, our flagship restaurant and now Little Aosta pair that inspiration with almost exclusive local produce from selected growers, breeders, fisherman, hunters and foragers.

The namesake city of Aosta is in an alpine valley near the meeting point of the Italian, French and Swiss Alps. This area remarkably shares similar latitude, elevation, climate, flora, fauna, soil characteristics with Central Otago and the Southern Alps.
